Sun Dried Tomato Soup

Once you have our delicious Berrilys Organic sun dried tomatoes, the first problem is what to do with them. They are so versatile that you can use them in almost every tomato based recipe to give it an extra flavor ‘punch’.
Well one of the things we suggest using them for first, as the summer draws to and end, is a nice, warming bowl of creamy sun dried tomato soup.
The ingredients are simple and feel free to add anything else you may have laying around the pantry. Some chopped onions, added with the garlic, would round off the dish. To add a bit of body to the soup, you could always add some pre-cooked rice, chick peas or beans after blending to make a filling winter warmer.
Ingredients
- 6 large tomatoes cut into chunks
- 4 large garlic cloves, roughly chopped
- 1 cup Berrilys Organic sun dried tomatoes
- 1 can, full fat coconut milk
- 1 cup vegetable stock
- 1 tsp sea salt
- Cracked Black pepper
- Sprig of Rosemary, for garnish
Firstly, you will need to take your Organic sun dried tomatoes and rinse them out under running water to clear off any excess salt left on them, then pat them dry with a towel.
Use a medium sized pot and put it on a low heat, then add a dash of oil and wait for it to get to temperature. Add your chopped garlic and cook for about 1 minute. Now you add your fresh tomatoes, turn up the heat a little and cook for about 10 minutes, stirring occasionally.
Once the tomatoes look cooked through, it’s time to add the rest of your ingredients. So, in goes your coconut milk, vegetable stock and not forgetting your Berrilys Organic sun dried tomatoes. Give it a quick stir then leave simmering for about 5 minutes.
After 5 minutes, use a stick bender to puree until smooth. Add as much black pepper as you like then spoon it into bowls, add some fresh Rosemary on top for a finishing garnish, serve with some fresh crusty bread and enjoy.
